Who loves pizza? Everyone does! And we love going out to grab some. But then there are days when you just feel enthusiastic enough to custom make some for yourself with your favourite toppings, jussst the way you like it!
This sauce is brilliant and crazy versatile, goes well as anything- pizza sauce, pasta sauce, use it as the base for open cheese toast, eat it with potato chips, fries, the list just goes on!
So make this yummy sauce in bulk and store it in your refrigerator, scoop out a spoonful and put it to good use as and when you be starvinggg!
So lets just get straight to it!

You will need (makes 4-5 cups) :
6 medium ripe Tomatoes (you could use 5 cups of tomato purée instead)
6-7 Garlic cloves, minced
1 medium Onion, chopped
2tbsp Olive oil
2 tsp Honey
Salt to taste
For seasoning: Basil (fresh or dry), Oregano, Chilli Flakes, Black Pepper
Method:
1. Fill a saucepan with water, set to boil on full heat.
2. Lightly groove the tomatoes into quarters. Place them in the saucepan top boil for 10-15 mins, until the tomato skins start coming off.

3. Remove from the heat and strain off the water. Once the tomatoes are cool peel off the skin.
4. Place these tomatoes in a mixer for about 2-3 seconds, so as to achieve the thick consistency.
5. Heat oil in a saucepan. Saute the minced garlic until golden. Add the onions, fry until transparent (about 4-5 mins). Then throw in some crushed black pepper.

6. Stir in the tomato paste.
7. Add the honey. Season with basil, oregano, chilli flakes. Add salt.
8. Check the taste and manipulate the flavour to you liking by altering the seasoning.

9. Cook for around 20 mins until the gravy becomes thick. If using purée, check that it's not still sour. Add a tablespoon of sugar to counteract the sourness if needed.
10. And your sauce is ready!
Now all you got to do is spread the sauce on your pizza base, add your favourite toppings and bake for just about 10-12 minutes!
Suggestions for toppings:
Onions, capsicum, mushroom, olives, corn, sundried tomatoes, spinach, fresh basil, any kind of meat (make sure you lightly stir fry any raw meat in some oil and seasoning before using it as topping)- chicken, sausages, salami, regular cheese, parmesan cheese, Mozzarella cheese, ANY cheese in fact!

You might not want to brown it as much as we did. I guess this is what happens when you're wayy too excited 'bout making pizza! So yea, keep a watch on your oven. |
