For the longest time I had this misconception that I couldn't bake or I'd just be baaad at it. I think it was mostly because baking sounded like this tedious, patience testing process. Okay, probably I was being plain lazy!
So one day (only due to this uncontainable craving of course), I thought of baking myself some muffins. I looked up a couple of recipes online and mixed them up according to my convenience and availability of ingredients and voila!
So altogether I've tried making the following flavours:
a) Chocochip-banana
b) Apple-cinnamon
c) Vanilla-chocochip
d) Apple-nutmeg-cinnamon
e) Coffee and banana

So you could simply choose any of your favourite flavours and mix them up with the basic muffin batter! They are crazy easy to make and soooper delicious!

This recipe makes 12 medium sized choco-banana muffins.
You will need:
1/4 cup white sugar
1/4 cup brown sugar (you could just use more white sugar if you don't have brown sugar)
1 1/2 cups flour
1 3/4 teaspoon baking powder
1/3 cup cold butter, cut into pieces
1 egg
1/4 cup milk

For flavouring:
150 gms of chocolate chips
4 bananas mashed up into paste
150 gms of chocolate chips

To coat:
1/4 cup butter, melted
1/3 cup granulated sugar
1/4 cup butter, melted
1/3 cup granulated sugar
Method:
1) Preheat oven to 350 degrees.

2) In a medium sized mixing bowl, whisk together sugars, flour and baking powder. Using a fork or pasty blender, cut in to the cold butter until the mixture resembles coarse crumbs.
3) In a separate bowl, beat together the egg and milk. Fold in the mashed banana and the chocolate chips.
4) Add the egg mixture to the dry ingredients. Stir until mixture is well combined.

5) Place the batter into a buttered and dusted muffin mould (you could also line the moulds with liners). Bake for 20-25 minutes or until the muffins are golden brown.
6) Remove from the oven and allow to cool for five minutes. Gently remove muffins from the moulds.
