Pav Bhaji



So who loves pav bhaji? *waves hand frantically in the air* xD
Yup! We thought so.

Today my mum was in the mood for pav bhaji and we thought let's make a post of it! Mum was so excited that her recipe was going to be featured on the blog that she insisted on making enough for an army..which she kinda does anyway!

Soooo.. we're going to let you guys in on The Mother's secret recipe. You lucky lucky buggers!

Let's start prepping then!




This quantity will serve 4-5 people or 3 extremely hungry people.




You will need: 

2 Onions
3 Tomatoes
1 small carrot
1 big potato
1 Capsicum
A small bowl of green peas
200gms Cauliflower
50gms french beans
1 tbsp ginger-garlic paste
50gms butter
Red chilli powder
Pav Bhaji masala (we personally recommend Baadshah or Everest masala)
6 tbsp oil (estimated)
Salt to taste


Garnishing:
A handful of finely chopped coriander for garnishing
1 finely chopped onion
1 lemon
Some butter



Method:
1) Cut the cauliflower into medium sized florets. Dice the carrots. Medium chop the french beans.

2) Boil the above along with the potatoes and peas in a pressure cooker. Set them to cool after.

3) Finely chop capsicum, onions and tomatoes.

4) Mash all the cooled boiled vegetables to get a coarse texture. If you prefer your pav bhaji to be pasty you could use a mixey to achieve the desired texture.

5) Heat 5-6 tbsp of oil in a saucepan.

6) Throw in the chopped onions and sautée until they soften and look yellowish-pinkish.

7) Add the chopped tomatoes. Stir regularly until the oil starts showing distinctly on the sides (roughly 7-8mins)

8) Add the ginger-garlic paste. Stir for 2-3 mins.

9) Add 1 1/2 tsp of chili powder and 4 tsp of pav bhaji masala (tweak these quantities according to your resistance for spice and flavour). Stir for 5mins.

10) Add the chopped capsicum. Stir for 5 mins.

11) Add the mashed boiled vegetables. And add water to achieve the desired consistency.

12) Add salt and butter. Garnish with coriander. And you're done!

13) Serve hot with toasted and buttered pav.

14) Dont forget to garnish your plate with some chopped onion, squeeze some lime and indulge in some additional amount of butter.

Oh so mouth wateringly DIVINE!


Tips:
- It's cool if you don't have all the vegetables but all of them add to the flavour and nutrition content. 
- Keep the texture of the boiled vegetables a bit coarse so it's feels less like baby food.
- More butter = more yum (ALWAYS)!
