Pancakes/Crepes

Pancakes for breakfast! Pancakes for lunch! Pancakes for dinner! Pancakes for midnight snacks! Yea yea yea! I'm addicted to pancakes and crepes! I don't think I can get enough of these guys *sigh

No wonder they have a day dedicated to pancakes! But I guess its Happy Pancake Day for me every day! Hail Pancake!


I still remember, the first time I ever made Pancakes, Tanvi happened to be around. We were both so excited over the achievement that we didn't really care about how they were a tab bit salty. Instead we sent a couple of vanilla ice cream scoops over them and ah! We were twinkly eyed for the next several minutes.

They're absolutely easy to make, literally take about 5 mins. And ah! Such comfort food. Makes your insides all happy :D


Crepes with honey strawberries and bananas and blueberries! Yum right?


You will need (makes 2 medium sized crepes/ 3 small pancakes):

4 tbsp All-purpose Flour
1 tbsp Caster Sugar
1 tsp Baking Powder
1/8 tsp salt

1 egg

4-5 tbsp Milk
1 tbsp Water
2 tbsp Cooking Oil/ Olive Oil/ Melted Butter

Suggestion for sides (pick any!) :

Maple syrup
Butter
Sliced Bananas
Scoop of nutella Or chocolate sauce
Honey
Caramelised Apple + Cinnamon + Honey
Fresh cream
Strawberries
Blueberries
Sprinkled sugar + cinnamon
Butterscotch topping 
Vanilla ice cream
Chocolate chips
Fruit compote/jam
Coffee


Method:

1. In a large bowl sift together all the dry ingredients- flour, baking powder (for pancakes, not crepes), sugar and salt.

2. In another bowl whip the egg light, whisk in the milk, water and 1 tbsp of melted butter.


3. Pour the egg mixture into the flour mixture and beat it well using a fork until you have a smooth batter. The lumps should disappear with a little bit of beating. Keep the batter thick for pancakes and thin for crepes. Thin it by adding some milk, if required. Let it stand for about 4-5 mins (allow the baking powder to work, the batter will rise slightly)


4. Heat a lightly oiled non-stick frying pan on medium heat. Pour or scoop the batter onto the pan. Use approximately 1/2 the batter if you're making crepes, 1/3 the batter if you're making pancakes. Work in batches.






5. The pancake/crepe will spread a little after they're on the pan. When the surface of pancake/crepe appears to bubble and the edges dry, flip them. The pancakes should rise about 1cm in height. 


6. Golden brown them from both sides, serve hot!



Variations:

- If you want your pancakes extra fluffy add 1/2-1 tsp of extra baking powder
- Add a handful of fresh blueberries into the batter before cooking or a teaspoon of cinnamon
