Pasta in Red Sauce

I find myself hungry at midnight several times. The clock strikes twelve and here I am trying to control my urge to give in to hunger'oclock, its so strange right?

One of my all time favourite and easy to make midnight snacks is pasta! Yes pasta, I enjoy elaborate meals even in the middle of the night.


Oh hello, delicious!




Firstly I suggest you guys make some of this sauce: Pizza Sauce. Trust me its super!


So let me tell you how.


You will need (makes enough for 2 hungry people):

3-4 cups of Pizza Sauce (or as required)
2 cups of Penne pasta (or a pasta of your choice)
1 capsicum (green peppers), diced
1 onion, sliced
1 tsp of minced Garlic
3 tbsp Olive oil
Salt to taste
Cheese, your favourite kinds- as much as you like!
For seasoning: Basil (fresh or dry), Oregano (fresh or dry), Black Pepper, Chilli Flakes

Just follow these easy steps:
1. Take water in a saucepan, add a pinch of salt, a pinch of black pepper and some chilli flakes. (DO NOT put oil, as the oil soaks into the pasta and later makes the sauce slip off) Bring to boil. Once it is boiling add your pasta and let it cook for the time written on your pasta packaging. Strain out the water once the pasta is cooked.

2. Heat oil in a pan. Fry the garlic, when golden add the onions and fry until transparent. Throw in the capsicum and gently fry only for about a minute or two. (Don't overcook the capsicum, keep it slightly crunchy)


3. Add the seasoning (basil, oregano, black pepper, chilli flakes) and fry for about 2 mins. (Remember the Pizza Sauce contains seasoning as well, so go easy on it)


4. Pour in the Pizza Sauce and let it cook for about 10 mins. Thicken the pasta sauce as per your liking.


5. Add the cooked pasta and let it cook for another 4-5 mins.


6. Garnish with cheese and herbs!



Tips:

- After straining the pasta if it sticks, hold it under some cool water.
- You could add more veggies like mushroom, corn, broccoli etc
