Microwave Mug Cake with a Ginger Latte twist



Despite our love of baking, sometimes Snigdha and I are just too lazy to wait for dessert and need a quick sugar fix. One such chilled out evening, we were watching a rerun of Friends in which Monica was baking.

I'm extremely impressionable when it comes to TV food (The Big Bang Theory is evil with all their pizza and Chinese) so I had an instant craving for cake. Meanwhile, Snigdha decided she wanted some sort of coffee. And in a fit of inspiration, the Ginger Latte microwave mug cake was born. Took all of 10 minutes total, and was really tasty! Plus it was quick, which was more important at that point of time.

It also smells AMAZING, which you'll find out soon enough (I'm estimating 10 minutes after you read this recipe).






This is what you need:

The flavours:
1 tsp or 1 sachet instant coffee 
1/4 tsp grated or ground ginger

1/4 tsp cinnamon

1 tbsp honey


And the regulars: 
4-5 tsp sugar (depending on taste)

1 egg

3 tbsp oil

3 tbsp milk

5 1/2 tbsp all-purpose flour

1/2 tsp baking powder


Method:  
Blend all in the ingredients together until the batter is smooth. The order does not make a difference.

Microwave for 1 1/2  minutes (90 seconds). If the cake is not done, microwave for another 20 seconds.

Tips:

- Add the oil first and use the same tablespoon for honey. Slides right off!
- Try to beat the egg and sugar together for a minute or so; a fluffy egg makes a fluffy cake :)
- You can skip the cinnamon and ginger if you want a simple coffee mug cake
